Ingredients
- For the CRUST mix together:
- 1 cup Butter, slightly softened
- 1/2 cup Powdered Sugar
- 2 cup Flour
- Dough will be crumbly, not sticky. Spray sides only of a cookie sheet & press dough in. BAKE 350° for 15 min.
- For the FILLING beat together:
- 4 tablespoons fresh lemon juice
- Grated rind of 2 lemons
- 2 drops yellow food coloring
- 4 eggs
- 4 tablespoons flour
- 2 cup sugar
- 1 teaspoon baking powder
- Pour over warm crust and put back into the oven for 20 minutes. Until slightly golden on top.
Preparation
Step 1
For the Lemon/Vanilla Buttercream FROSTING:
1 cube butter, softened
Add the powdered sugar to the butter 1 cup at a time, mixing after each addition.
1 32oz. bag powdered sugar
3 tsp vanilla extract
Zest of 2 lemons
Juice of 2 lemons depending on spreading consistency.
Spread over cooled lemon bars, cut into squares and eat em up!
