Ingredients

  • For the CRUST mix together:
  • 1 cup Butter, slightly softened
  • 1/2 cup Powdered Sugar
  • 2 cup Flour
  • Dough will be crumbly, not sticky. Spray sides only of a cookie sheet & press dough in. BAKE 350° for 15 min.
  • For the FILLING beat together:
  • 4 tablespoons fresh lemon juice
  • Grated rind of 2 lemons
  • 2 drops yellow food coloring
  • 4 eggs
  • 4 tablespoons flour
  • 2 cup sugar
  • 1 teaspoon baking powder
  • Pour over warm crust and put back into the oven for 20 minutes. Until slightly golden on top.

Preparation

Step 1

For the Lemon/Vanilla Buttercream FROSTING:
1 cube butter, softened
Add the powdered sugar to the butter 1 cup at a time, mixing after each addition.
1 32oz. bag powdered sugar
3 tsp vanilla extract
Zest of 2 lemons
Juice of 2 lemons depending on spreading consistency.

Spread over cooled lemon bars, cut into squares and eat em up!
