Ingredients
- CAKE
- 2 1/3 c. flour
- 1 3/4 c. sugar
- 2 t. baking powder
- 1 t. salt
- 1 c. shortening
- 1/2 c. chopped pecans
- 1/4 c. chopped green cherries
- 1/4 c. chopped red cherries
- 3/4 c. milk
- 1 t. rum flavouring
- 1 t. vanilla
- 4 eggs
- 1/2 c. sultanas
- GLAZE
- 1 c. icing sugar
- 1 T. milk
- 1/2 t. vanilla

Preparation
Step 1
1. Preheat oven to 375 degrees F. Grease a tube pan.
2. In a large mixer bowl, whisk together flour, sugar, baking powder and salt.
3. Add shortening, milk and flavourings. Beat 2 minutes on medium speed.
4. Add eggs, beat 2 minutes more.
5. Stir in fruit and nuts.
6. Spread evenly in greased tube pan.
7. Bake 60-65 minutes, or til done.
8. Cool.
GLAZE
1. Beat together icing sugar, milk and vanilla.
2. Drizzle over cooled cake.
