  • 3/4 lb gemelli
  • 5 slices of bacon
  • 3 tbs butter
  • 2 med onions, diced small
  • 1 garlic clove
  • 1 med head cauliflower
  • 2 tbs sage
  • 2 stp red-wine vinegar

Preparation

Step 1

boil pasta and save 1/2 Cup of the pasta water
2. in a large skillet, cook bacon over med heat until fat is rendered and bacon crisp. Add butter, and garlic to skillet and cook until onions are soft. Add cauliflowers and cook until tender. stir in bacon and sage until fragrant 1 min. add pasta to mixture vinegar and enough water to create a thin sauce.
