Yellow Squash Casserole

Ingredients
- 6 small yellow squash, sliced into 1/4-inch slices
- 1 medium onion, chopped
- 2 Tbl. butter
- 1/4 C water
- salt, to taste
- 1 (2.25 oz.) can sliced water chestnuts, drained
- 1/4 C grated sharp Cheddar cheese
- 1 Tbl. mayonnaise
- 1-1/2 slices bread, made into crumbs
- 1 Tbl. butter, melted

Preparation
Step 1
In a medium saucepan, add squash, chopped onion, butter, water and salt to taste. Saute until squash is just tender. DO NOT OVERCOOK. Drain. Add the water chestnuts, cheese and mayonnaise. Stir to coat vegetables. Place in lightly greased 2-quart casserole dish. Stir bread crumbs into melted butter and sprinkle over top of casserole. Bake in 350 degree oven for about 25 minutes or until heated through.
