Hazelnut Vanilla Shortbread

Ingredients

  • 6 tbsp soft butter
  • 1/2 vanilla bean split & scraped
  • 1/2 c sugar
  • 1 c brown rice flour
  • 1 c finely ground hazelnuts
  • 1/2 tsp coarse salt

Preparation

Step 1

Preheat oven to 350F. Line 8 in sq pan with parchment with 2 in overhang on 2 sides. Cream vanilla seeds & butter til fluffy. Reduce to low speed, add remaining ingredients. Press into pan. Freeze til firm (30 min). Score shortbread into 18 pieces. Bake until golden - 55-60 min. Let cool 15 min. Cut into pieces. Store in covered container.
