Chicken Enchiladas

Ingredients

  • OPTIONAL:
  • 4 Chicken Breasts
  • 1 llas
  • 1 pkg Taco Seasoning
  • Sour Cream
  • Corn Tortillas
  • 1 pkg Monterrey Jack Cheese (shredded)
  • 1 4 oz can chopped Green Chilis
  • 1 pkg Longhorn Cheese

Preparation

Step 1

Cook Chicken (Boil) and shred

FILLING:
Mix shredded chicken, taco seasoning, and sour cream (enough sour cream to make a nice consistency for a filling).

Fill a small frying pan about 1/4 way with oil and heat on low for about 10 minutes.

Place tortilla in oil to soften it up for just a few seconds, then put on a plate and place filling down the middle of the tortilla.

Wrap edges and place seam-side down in greased 13x9" pan.

Repeat until all enchiladas are made.

Top enchiladas with plenty of sour cream and sprinkle Monterrey Jack cheese on top.

Bake 350 for 25-30 minutes.
