Ingredients

  • 1 16 ounce box of dried elbow macaroni
  • 1 cup grated Cheddar
  • 1/2 cup grated Swiss
  • 1 cup grated Jack
  • 1/2 cup grated Gouda
  • 1/2 cup sour cream
  • 6 tablespoons butter, cut into pieces
  • 2 Tbsp flour
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup milk
  • 1/2 cup half and half
  • Nonstick spray

In a large pot, bring water to boil. Season water with salt and cook macaroni until al dente, about 10 minutes. Drain pasta and place in a large bowl.

In a separate sauce pan, combine butter, flour, and stir on med heat for 4 minutes. Using a whisk, combine the sour cream, butter, egg, salt, pepper, and milk, half and half to sauce. Stir until thickened. Stir in all cheeses. Stir. Add noodles, an stir thoroughly. Spray casserole dish with nonstick and pour macaroni mixture into the dish. Bake at 350 degrees for 30 to 45 minutes or until golden brown. Top with additional cheese, if desired.

Note: Can also use a small grated (or finely chopped) onion in mixture, just add to butter in the beginning before you add the flour.
