These are my shortcut version of everyone's favorite. Serve alone or with berries and whipped cream, or your favorite ice cream or gelato.

Ingredients

  • 1/2 lb. mini-bittersweet chocolate chips (about 1 - 1/3 cups)
  • 12 pound (2 sticks) unsalted butter
  • 6 large eggs
  • 1 1/2 cups sugar
  • 1/2 c flour

Preparation

Step 1

*Preheat the oven to 400 degrees.

*Arrange 10-12 ramekins on a rimmed baking sheet.

*Combine chocolate and butter in a microwave-safe bowl. Cook on high for 2 minutes. Stir until melted.

*In another bowl, whisk together the eggs, sugar and flour. Whisk the chocolate into the egg mixture until uniform.

*Divide the mixture between the ramekins.

*Bake for 10 to 12 minutes or until the tops are firm and beginning to crack and the edges are set.

*Don't be tempted to overcook...it's preferable to under cook than overcook.

*Serve immediately.

*Makes about 8 lava cakes.
