Healthy Tomato Soup

Ingredients

  • 3 lbs ripe Tomatoes
  • 1 large white Onion or 2 medium white Onions
  • 3 Tbsp unsalted Butter
  • 3 Tbsp Basil
  • 2 Tbsp Oregano
  • 1/2 tsp Sugar
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Step 1

Preparations:
Cut tomatoes in half, removing the stem and seeds along the way (don't stress if some seeds remain).
Roughly dice the onion.
Finely chop the oregano and basil.

Directions:
Place tomatoes in baking dish skin side up and broil in oven 10-12 min. or until skins are charred. Once tomatoes have cooled a little, remove skins. (The skin should slide off easily, but don't worry if some skin remains.) Pour the tomatoes and any liquid from the baking dish into a medium or large saucepan/pot and heat over medium heat. Add salt, pepper, and sugar.

While tomatoes are in oven, saute the onion in the butter for 3-5 min. Set aside.

Before adding the remaining ingredients, take a hand-mixer and puree the tomatoes. Then add onion, basil, and oregano. Simmer for 12-15 min.
