Ingredients
- 1 can of black beans, drained and rinsed
- 1 can of diced tomatoes, drained
- 1 4oz can of green chiles, drained
- 1 jalapeno, seeded and chopped (optional)
- 1/2 cup of salsa
- 1/4 cup of corn (fresh or frozen)
- 1 teaspoon of cumin
- 1 teaspoon of red pepper
- 1 teaspoon of chili powder
- 1/2 cup shredded cheddar cheese + 1/4 cup of cheese for the top
- Garnish options: chopped tomatoes, green onion, cilantro

Step 1
Preheat oven to 375
Mix all ingredients by hand (except for garnish and cheese for the top) in a mixing bowl
Transfer to baking dish, bake for 20 minutes, remove and sprinkle remaining cheese on top and bake for another 5 minutes, or until cheese is melted.
