Fish steaks with Basil Walnut Sauce

Ingredients
- 1/2 cup fresh parsley, snipped and loosely packed
- 1/2 cup fresh basil, snipped and loosely packed
- 3 tbsp finely chopped walnuts
- 2 tbsp chicken broth
- 2 tbsp grated Parmesan cheese
- 1 tbsp olive oil
- 1 tbsp balsamic or malt vinegar
- 1 tsp granulated sugar
- 1 clove garlic, minced
- 1/2 tsp freshly ground pepper
- 1 1/4 - 1 1/2 lbs cod, haddock or halibut fillets
- 1/4 cup dry white win
- 1/2 lemon
- 1 tbsp margarine or butter
- Salt and pepper

Step 1
In food processor or blender, place parsley, basil, walnuts, chicken brother, cheese, oil, vinegar, sugar, garlic and pepper. Process until smooth; add more broth if thinner sauce is desired. Arrange fish in a broiler or roasting pan. Pour win into pan, squeeze lemon over fish. Dot with margarine, sprinkle with salt and pepper. Broil 5 minutes. Spoon sauce over and broil another 4 – 5 minutes, allowing total of 10 minutes per inch (2.5 cm) of thickness. Makes 6 servings.
