Minestrone soup

Ingredients

  • 1/2 pound great northern beans
  • 1/4 c olive oil
  • 1/4 butter
  • 1 1/4 c chopped carrot
  • 2 1/2 c chopped celery
  • 1 1/2 chopped onion
  • 16 oz tomatoes
  • 4 qts chicken stock
  • 2 cups diced potatoes
  • 1 T salt
  • 1 clove garlic crushed
  • 1/4 cup chopped parsley
  • 1 T basil leaves
  • 1/2 oregano
  • 1/2 pound diced cooked ham
  • 1 package italian green beans
  • 1 pound sliced zucchini
  • 1/2 c elbow macaroni
  • 2 cups shredded cabbage
  • grated parmesan cheese

Preparation

Step 1

1. wash and soal beans overnight in cold water overnight. drain and cook in water till not quite tender. drain and set aside.

2. heat oil and butter in saucepan. add carrot, celery and onion. saute for 5 minutes. add tomatoes and bring to a boil. simmer 10-15 minutes.

3. meanwhile, combine stock and potatoes in soup pot. bring to boil til potatoes are just tender. add simmering veggies, reserved beans, seasonings, ham, and green beans. bring to a boil and simmer 20 minutes.

4. add zucchini, macaroni and cabbage, and simmer 15 minutes more.

5. garnish with parm cheese.
