BUTTERMILK LEMON PIE

Ingredients

  • 1 cup sugar
  • 6 Tbsp. cornstarch, plus 1/2 Tbsp.
  • 2 cups buttermilk
  • 2 lemons (juice & grated rinds)
  • 2 Tbsp. butter
  • 4 egg yolks (save whites and put in refrigerator to chill)

Preparation

Step 1

Mix sugar and cornstarch, gradually stirring in buttermilk.
Cook over medium heat until mixture thickens (very thick)
stirring constantly.

Add beaten egg yolks, butter, lemon juice and grated lemon
rinds. Pour into already baked pie shell.

Beat egg whites until stiff and dry. Gradually add 1/2 cup
sugar for (4) egg whites stirring in well. Put back in
refrigerator for a few minutes. Then take out and spread over
pie and brown quickly in 375 degree oven for 10 minutes.
