Ingredients

  • Cake

  • 3

    cups all-purpose flour

  • 1

    tsp baking powder

  • 1/2

    tsp baking soda

  • 1/2

    tsp salt

  • 1

    tsp freshly grated nutmeg

  • 3/4

    cup margarine* (or butter)

  • 1 1/2

    cups sugar

  • 3

    eggs*

  • 1 1/2

    cups Silk Nog**

  • Rum Drizzle

  • 2

    cups powdered sugar

  • 3

    Tbsp spiced rum

  • 2-3

    Tbsp Silk Nog**

  • 1/4

    tsp freshly grated nutmeg

Directions

1.Preheat oven to 350°F. Grease and flour a Bundt pan. 2.Whisk together flour, baking powder, soda, salt and nutmeg in a bowl. 3.In another bowl, beat margarine and sugar until light and fluffy. 4.Add eggs, one at a time, beating after each addition. 5.Alternately add flour mixture and nog. 6.Spread batter in prepared pan. Bake for 1 hour or until top springs back and a tester comes out clean. 7.Cool 10 minutes in pan. Remove from pan and cool completely. 8.Combine Rum Drizzle ingredients and drizzle over cake. Note: For a vegan version, use vegan margarine and substitute each egg with 1 Tbsp golden flax meal soaked in 3 Tbsp warm water. If Silk Nog isn’t in season, try this recipe with Vanilla soy, almond or coconutmilk and make these adjustments to cake: add 1 tsp vanilla, 1/2 tsp cinnamon and increase nutmeg to 1 tsp.
