Ingredients
- Sauce:
- 1 Tbs olive oil
- 1 medium onion
- 1 bulb garlic
- 1 green pepper
- 2-4oz cans mushrooms
- 66 oz tomato sauce
- 36 oz tomato paste
- 32 oz (4 cups) water
- 8 oz red wine
- 1-28 oz Cento chefs cut tomatos
- 1-28 oz Cento all purpose crushed tomatoes
- 2 bay leaves
- 2 Tbs garlic powder
- 1 Tbs sugar
- 3 tsp parsley
- 4 Tbs oregano
- 3 tsp italian seasoning
- 1 1/2 tsp salt
- 1 tsp pepper
- Meatballs-makes 40-46:
- 3 pounds hamburger
- 10 eggs
- 2-8 oz cups bread crumbs
- 1/3 c Fresh parsley
- 6 oz grated parmesan cheese
Preparation
Step 1
Sauce:
Dice onion, garlic, green pepper. Cover bottom of large pan with oil and saute. Add mushrooms and remaining ingredients including seasonings. Cover and simmer for 3-4 hours.
Meatballs:
Mix all ingredients together and form into golf ball size meatballs. Add meatballs to sauce, top with 6 oz parmesan cheese. Continue cooking for remainder of the 3-4 hours.
Makes about 5 containers of 3 cups sauce and 7 meatballs and 1 extra bag of meatballs
