Ingredients
- 1 (10 oz) package frozen chopped spinach
- 3 T butter
- 3 T flour
- 1 tsp salt
- dash cayenne pepper
- 1 1/2 C milk
- 1/4 C grated Parmesan
- 1/2 C llight cream
- 2 C diced cooked chicken
- 1/3 C dry bread crumbs
Preparation
Step 1
Cook spinach, drain well transfer to 1 1/2 qt baking dish.
Melt 2 T butter in saucepan. Stir in flour, salt and cayenne. Gradually add milk and cook, stirring constantly, until mixture thickens and comes to a boil.
Add cheese and cream; cook over low heat until cheese is melted. Add chicken; pour cream mixture over spinach. Sprinkle with bread crumbs, dot with remaining butter,
Place under broiler ahd heat until lightly browned.
