Ingredients
- 1 c flour
- 1 c yellow cornmeal
- 2 T sugar
- 2 1/2 t baking powder
- 1 c buttermilk
- 1/2 c oil
- 2 eggs lightly beaten
- 1 fresh jalapeno chopped
- 1 1/2 c shredded cheddar cheese divided

Step 1
Heat oven to 400. Coat 12 muffin cups with cooking spray. Combine flour, cornmeal, sugar, baking powder, and salt in large bowl. Stir together buttermilk, oil, eggs, and jalapeno in medium bowl. Add to dry ingredients. Stir to combine. Stir in 1c cheese. Spoon evenly into muffin cups. Bake 15-20 minutes or until toothpick comes out clean. Remove from oven and sprinkle with the rest of the cheese. Cool 5 minutes on wire rack. Serve warm.
