Simple Dilled Potato Salad

  • 1/4 cup Onion ; chopped
  • 3/4 cup Celery ; chopped
  • 1/2 cup Mayonnaise (light if desired)
  • 1/2 cup Sour cream
  • 1 teaspoon Dill Weed
  • 1 tablespoon Mustard
  • Salt and pepper ; to taste
  • Paprika
  • Hard Boiled Egg for Garnish
  • 6 Red potatoes (medium or equivalent small)



Step 1

Boil unpeeled potatoes until tender, cool quickly in cold water. Dice, leaving skins on. Mix with celery and onions. Mix dressing ingredients (mayonnaise, sour cream dill weed and mustard, salt and pepper) and combine with potato mixture. Refrigerate at least 4 hours before serving. Garnish with papriika and sliced hard boiled egg, if desired
