  • Crust:
  • 1 cup softened butter
  • 2 cups flour
  • 1/2 cup powdered sugar
  • Topping:
  • 4 large eggs
  • 1 3/4 cups superfine sugar
  • 1/3 cup fresh lemon juice
  • 1 Tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt



Step 1

1. Preheat oven to 350 degrees. Line 13X9 pan with aluminum foil with edges over sides and spray with Pam
2. Mix butter, flour and sugar in medium bowl and press mixture in bottom of prepared pan
3. Bake at 350 degrees for 20 minutes
4. 5 minutes before crust is done, in mixer beat eggs on medium for 1 minute.
5. Increase speed and add sugar slowly over 2 minutes, beating until light and thickened. Add lemon juice, zest, and baking powder and beat for 1 more minute
6. Pour filling over top of crust and bake for 25-28 more minutes until top is lightly browned
7. Cool and top with powdered sugar
