Potato Corn Casserole

Ingredients

  • 1 bag cubed potatoes
  • 1/2 cup cracked pepper mayo by Kraft
  • 1/2 cup cheese
  • 1/4 cup water
  • 4 ears of corn cut off the cob
  • salt to taste
  • 1 medium tomato, sliced
  • olive oil
  • Mediterranean Herb Perfect Pinch (McCormick)

Preparation

Step 1

1. Preheat oven to 400F. Spray a 8" or 9" square dish and place potatoes, cheese, mayo and water, stir to combine. Top with corn and sprinkle with salt.

2. Cover and cook 30 mins then lay sliced tomato on top and drizzle with oil and sprinkle with Mediterranean seasoning. Cover and bake 10-15 mins longer.
