Ingredients

  • 2 cups quinoa
  • 5 cups water
  • pinch of salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 cups pumpkin puree
  • Toppings of choice
  • dried cranberries, raisins, Sucanat or maple syrup, walnuts, flax seeds, sunflower seeds, cream, coconut flakes, pumpkin seeds etc.

Preparation

Step 1

Bring water to a boil in a large saucepan.
Rinse quinoa well.
When water comes to a boil, add quinoa and salt. Simmer over medium-high heat for about 5 minutes, covered.

Turn off heat and let sit (still covered) for about 10 minutes, or until all the water is absorbed. Stir in cinnamon, nutmeg, pumpkin puree. Spoon into bowls and serve with toppings.
