Spicy Black Bean and Corn Chili

Ingredients
- 1 medium onion
- 1 tsp. olive oil
- 3 cloves garlic
- 1 cup chopped zucchini
- 1 cup chopped bell peppers (green and/or red)
- 2 cups white corn frozen or fresh
- 2-15 oz. cans crushed tomatoes
- 1/2 cup any salsa
- 2-15 oz. cans beans, drained (black or pinto)
- 2 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. oregano
- Add any veggies to make more.

Saute all veggies in oil, add the rest and simmer for 30 minutes or more. Enjoy!
