Ingredients

  • MERINGUE
  • 1 c. naturegg simply egg white, well shaken
  • 1 c. sugar
  • 1 T. vinegar
  • 1 3/4 c. icing sugar, sifted
  • 2 T. cornstarch
  • FILLING
  • 1 can sweetened condensed milk
  • 2 c. thick plain yogurt
  • 1/4 c. lemon juice
  • 1 T. lemon rind
  • 1 t. vanilla
  • BERRY SAUCE
  • 2 c. frozen mixed berries
  • 1/2 c. strawberry jam
  • 1 t. vanilla
  • GARNISH
  • 2 c. frozen mixed berries

Preparation

Step 1

1. Preheat oven to 225 degrees F.

MERINGUE

1. In a large mixer bowl, beat egg whites til light and starting to hold shape. Gradually add granulated sugar to egg whites and beat til firm. Beat in vinegar.

2. Whisk icing sugar and cornstarch together. Gently fold icing sugar and cornstarch into meringue mixture, in thirds.

3. Spoon egg whites into circle on prepared baking sheet, about 12".

4. Bake in preheated for 1 hour 45 minutes. Turn off oven, leave door ajar and let meringue cool completely in oven.


FILLING

1. Mix all ingredients together til well combined.


SAUCE

1. Place frozen berries and jam in a small saucepan.

2. On low heat, simmer for 2-3 minutes.

3. Remove from heat, stir in vanilla, reserve.


ASSEMBLY

Gently spoon filling over cooled meringue. Spoon berry sauce over filling. Top with frozen berries.
