  • 1

    lb ground turkey

  • 1

    medium onion, finely chopped

  • 1

    can cream of mushroom soup

  • 1

    C salsa

  • 1

    t ground cumin

  • 1

    t chili powder

  • 1

    t paprika

  • ½

    t garlic powder

  • salt and pepper to taste

  • 3-4

    flour or corn tortillas

  • 1

    pkg shredded cheese, Mexican blend or cheddar

  • tortilla chips

  • To top with:

  • Chopped tomatoes

  • Sour cream (greek yogurt)

  • Salsa

  • Shredded lettuce


Heat oven to 350 1. Brown ground turkey and onion i large skillet. 2. Add soup, salsa, and seasonings. Stir and simmer until thoroghly mixed 3. Spray casserole dish with cooking spray. Place a small amount of the turkey mixture on the bottom of the casserole. 4. Place tortilla on top of turkey mixture. 5. Continue layering turkey, cheese, tortilla etc ending with cheese. 6. Place a couple of handfuls of crumbled tortilla chips on top. 7. Bake for 20-30 minutes or until the top begins to brown and casserole is bubbly. Serve with sour cream, salsa, shredded lettuce and chopped tomato.
