Banana Carrot Bread

  • 1 c mashed bananas
  • 3/4 c salad oil
  • 2 c flour
  • 1 tsp baking soda
  • 1 c finely grated carrot
  • 1 c sugar
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 c chopped pecans



Step 1

Combine banana, oil, sugar and eggs in large bowl. Beat with electric mixer for 2 mins. Sift together flour, soda, salt and cinnamon. Fold into banana mixture. Stir in carrot and pecans. Bake in greased and floured 9x5x2 3/4 loaf pan at 350 for 55-60 mins. Cool in pan for 10 mins before removing. Cool completely. Wrap and store overnight before cutting.
