HERE'S THE SOUP RECIPE I TOLD YOU ABOUT.  MY FRIEND JUDY ONLY MAKES IT FOR HER PRE CHRISTMAS GET TOGETHER..IT'S 10:30 P.M. AND I WAS JUST TURNING OUT THE LIGHTS ETC., AND SAW SHE'D SENT IT...ENJOY...XX SUZ

Ingredients

  • 1/3 C Olive Oil
  • 1 Onion (cut into rings)
  • 4 Carrots (thick sliced)
  • 1 Fennel Bulb
  • 2 Potatoes
  • 1 Green Bell Pepper (chopped)
  • 1 Zucchini
  • 1 Can green beans
  • 2 Cans Beef broth + 8 C water
  • 1 Can Italian Plum Tomatoes
  • 2 T Oregano Powder
  • 1 T Basil Leaves
  • Salt & Pepper to taste (I never add this, I figure people can add it if they want it)
  • 1 Can Cannellini Beans (White kidney beans)
  • 1 Lb Cheese Tortellini (I only use fresh refrigerated, not dried)
  • 1 1/2 Lbs Sweet Italian Sausage

Preparation

Step 1

Heat Oil in Pot
Add onion and sauté 15 minutes
Stir in carrots & sauté 2-3 minutes tossing lightly
Add Fennel, Potatoes, Green Pepper, Green Beans, Zucchini
  Sauté each 2-3 Minutes
Cook 5 minutes, stirring frequently
Add Beef broth/water, Tomato w/juices & Spices
Heat to boil
Reduce heat, simmer covered low heat 2-3 hours
 
15 minutes before serving:
    Add Cannellini beans & Tortellini
    Raise heat to cook
    Add Sausage Before serving
    Sprinkle with parmesan (we've never done this but it might be good)
