Coronation Chicken

This is an English favorite, and it was served at Queen Elizabeth's coronation.
Ingredients
- 1/2 diced onion
- 1 T. Olive oil
- 1 T. curry powder, mixed with a LITTLE water to make a paste
- 3/4 c. mayonnaise
- 2 T. ketsup
- 1/2 c. apricot preserves
- 1/4 c. heavy cream
- the meat from one whole cooked chicken, cut into bite sized pieces
- slivered almonds, toasted in oven

Preparation
Step 1
Cook onion until soft but not brown in olive oil, about 4 minutes. Add curry powder paste, stir for about one minute, turn of heat and set aside.
Combine mayonnaise, ketsup, apricot preserves and cream in another (large) bowl. Add the onion-curry mixture. When this is thoroughly mixed, fold in all the cooked chicken.
Place all this in refrig to cool for at least 3 hours, or overnight. Just before serving, place almonds in a dry pan and brown over medium heat on stove top . Let them toast/heat, but not turn brown or burn.
To serve, place Coronation Chicken on a platter and surround it with "rice salad": any cooked rice with various veggies chopped into it: carrots, peppers, onions, peas, or serve with anything else you like.
