Ingredients

  • 12 oz cooked, shelled and deveined small shrimp
  • 1 cup chopped scallions
  • 2 tbsp olive oil
  • 2-3 small garlic cloves, minced
  • 1 1/3 cups water
  • 4 packets instant chicken broth and seasoning mix
  • 1 1/2 tsp hot sauce
  • 1/2 tsp crushed red pepper
  • 2 bags Success instant rice
  • 2 medium tomatoes, seeded and cut into thin strips
  • 1 cup diced green bell pepper
  • 1 1/2 tsp salt
  • dash pepper
  • Flat parsley sprigs and lime slices

Preparation

Step 1

1. In large glass or stainless steel bowl - not aluminum
combine shrimp, scallions, oil and garlic and toss to coat thoroughly
2. Cover with plastic wrap and chill overnight
3. In 1 qt saucepan combine water, broth mix, hot sauce and red pepper, stirring to dissolve broth mix and bring to a boil. Stir in rice.
4. Remove pan from heat, cover and let stand 5 mins; using a fork, fluff rice
5. Add tomatoes, bell pepper, salt and pepper, toss to combine
6. Add rice mixture to shrimp mixture, toss to combine
7. Cover with plastic wrap and refrigerate at least 1 hour
8. Serve with parsley and lime slices
