Ingredients

  • Cookie Bottom:

  • 1

    cup all-purpose flour

  • 3

    tablespoons powdered sugar

  • 1

    stick (½ cup) salted butter, cold

  • Filling:

  • 2

    large eggs

  • 1

    cup granulated sugar

  • 1

    teaspoon vanilla extract

  • ¼

    cup all-purpose flour

  • ½

    teaspoon baking powder

  • ¼

    teaspoon salt

  • ¾

    cup chopped walnuts

  • ½

    cup halved maraschino cherries

  • ½

    cup flaked coconut

Directions

Step 1: Preheat oven to 350 degrees F. Step 2: Lightly grease 13x9x2-inch baking pan; set aside. Step 3: In a medium bowl, combine flour and powdered sugar. Step 4: Cut in cold butter until a crumbly mixture results. Step 5: Press mixture into prepared baking pan. Step 6: Bake 10-12 minutes or until lightly browned. Remove from oven and cool. Step 7: In a large bowl, beat together eggs, sugar, and vanilla extract with an electric mixer set on medium speed. Step 8: Add flour, baking powder, and salt. Mix until combined. Step 9: Stir in walnuts, cherries, and coconut. Step 10: Spread over crust. Bake for 20-25 minutes or until firm. Cool completely before cutting into bars.
