Zucchini Loaf

Ingredients

  • 3 eggs
  • 3/4 cup salad oil
  • 2 cups sugar
  • 2 tsp vanilla
  • 2 cups coarsely shredded zucchini
  • 1 14 oz can crushed pineapple well drained
  • 3 cups flour (barley)
  • 2 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • chopped nuts optional

Preparation

Step 1

Beat eggs, oil, sugar and vanilla
until thick & foamy
With a spoon, stir in zucchini and pineapple
Combine flour,salt, cinnamon, soda,
Stir into zucchini mixture just until mixed. Divide into 2 greased loaf pans.
Bake at 350 for 45-55 min.
