Ingredients

  • 2 cups flour
  • 1.5 cups sugar
  • 2 tsp cinnamon
  • 1 tsp baking powder and soda
  • 1/2 tsp sal
  • 1/2 cup Mazola corn oil
  • 3 eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple with juice
  • 1/2 cup walnuts, raisins, or craisins
  • Cream Cheese Frosting
  • 1 pkg softened cream cheese
  • 2.5 cups icing sugar
  • 2 tbs butter
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • Candied orange Rinds for topping
  • shoe string orange rind
  • in pan combine 1 cup sugar, 1/4 cup water
  • melt together, low boil for 6-8 minutes

Step 1

1. 350 degrees
2. Combine dry ingredients well
3. add wet stuff, then carrots and walnuts
4. Pour into gresed and floured pan
5. Bake 50-55 mins
