GROUND****Basil Chicken Meatballs with Ponzu Sauce

Ingredients
- Meatballs:
- 6 servings
- 1/2 cup panko breadcrumbs
- 3 tbsp. chopped green onions
- 3 tbsp. chopped fresh basil
- 4 teaspoons sweet chili sauce
- 1 teaspoon minced garlic
- 1 teaspoon fish sauce
- 1 pound ground chicken
- 1 large egg white, lightly beaten
- Cooking spray
- Sauce:
- prepared ponzu sauce, with added chili flakes, basil leaves and green onions, OR:
- 3 tbsp. lower-sodium soy sauce
- 1 tablespoon small basil leaves
- 1 tablespoon chopped green onions
- 4 teaspoons fresh orange juice
- 2 teaspoons fresh lemon juice
- 1 teaspoon water
- 1 teaspoon mirin
- Dash of crushed red pepper
Preparation
Step 1
*To prepare meatballs* combine first 8 ingredients in a large bowl; *cover* and *refrigerate* until cooking time.
*Scoop* meatballs onto parchment-lined baking sheet with mini ice-cream scoop and *bake* at 425° for 20 - 30 minutes or until done and golden, turning as needed. (I set the oven for 25 minutes and they were just on the edge of overdone, but we liked the crispiness)
*To prepare the sauce*, combine soy sauce, basil leaves, green onions, juices, 1 1/2 teaspoons water, mirin, and red pepper in a small bowl.
*Serve* sauce with meatballs. *Garnish* with basil leaves and additional chopped green onions, if desired.
