Peaches & Cream Coffee Cake

Ingredients

  • 3/4 c. flour
  • 1 pkg. vanilla pudding (not instant)
  • 1 tsp. baking powder
  • 3 T. butter
  • 1 egg
  • 1/2 c. milk
  • 1 lg. can sliced peaches, drained, save liquid
  • 1 (8oz) pkg. cream cheese, softened
  • 3 T. peach juice
  • 1/2 c. sugar

Preparation

Step 1

Combine flour, pudding, baking powder, butter, egg, milk, and beat for 2 minutes. Pour into an 8x8 inch pan. Arrange peaches on top of batter. Combine cream cheese, peach juice, and sugar. Beat for 2 minutes and spoon on top of peaches.
TOPPING:
1 T. sugar
1/2 tsp. cinnamon
Mix sugar and cinnamon and sprinkle on top. Bake at 350 degrees for 30-35 minutes. Let stand for 30 minutes before cutting.
