ONION BEER BREAD

Ingredients

  • Topping:
  • 2 3/4 cups flour
  • 1 tbsp baking powder
  • 1 tbsp sugar
  • 1 1/2 tsp dry mustard
  • 1/2 tsp salt
  • 1 cup grated old Cheddar cheese
  • 2 green onions, finely chopped
  • 2 tsp dried basil
  • 1 bottle (341 ml) beer at room temperature
  • 1 small onion, thinly sliced into rings
  • 1/4 cup grated old Cheddar cheese
  • 1 tbsp sesame or sunflower seeds

Preparation

Step 1

In a large bowl, combine flour, baking powder, sugar, mustard and salt. Stir in cheese, onions and basil. Pour in beer, stirring until just blended and no dry spots remain. Spread evenly in greased loaf pan. Arrange onion rings over surface of bread mixture. Sprinkle with cheese and seeds. Bake in preheated 350F oven for 50-55 minutes or until a cake tester comes out clean when inserted in centre. Let stand for 5 minutes in pan on wire rack. Remove from pan and let cool a few minutes before slicing. The bread may be prepared ahead of time. Wrap in foil and reheat in 325F oven for 15-20 minutes.
