Swordfish Sandwich on Foccacia with Arugula

Swordfish can be served on top of arugula or on foccacia with a dressing and arugula.

Ingredients
- Dressing:
- 2/3 cup mayonnaise
- zest of 1 lemon
- juice of 1/2 lemon
- 1 clove garlic
- salt and pepper
- Swordfish:
- 4 Swordfish steaks
- 2 cloves garlic
- Herbs de Provence
- 1 tbl olive oil
- 4 foccacia

Preparation
Step 1
Mix together the sauce ingredients and set aside.
On both sides of swordfish, put 2 cloves minced garlic, salt and pepper, and herbs. Cook in frying pan in olive oil until just cooked through.
Spread 4 foccacia with sauce, top with arugula, then place a swordfish steak on each foccacia.
Or place the swordfish on top of the arugula and eat without foccacia. Swordfish can be dipped in sauce or not.
Serve.
