Ingredients
- 2 1/2 cups grated zucchini(SQUEEZE OUT EXCESS MOISTURE)
- 1 cup peeled and shredded potatoes (SQUEEZE OUT EXCESS MOISTURE)
- 1 cup shredded carrots
- 1/2 tsp salt
- 3 eggs,lightly beaten
- salt and black pepper to taste
- 3/4 cup matzah meal or flour(matza meal is better)
- 1/2 cup chopped fresh parsley
- 1/2 cup crumbled feta cheese
- 1/4-1/2 cup vegetable oil
Preparation
Step 1
Place zucchini,potatoes and carrots in a colander.place paper towels or a cheesecloth over the top and squeeze out as much moisture as possible. Sprinkle salt over vegetables and let them drain foe 15 min. Squeeze vegetables again in paper towels.
In a large mixing bowl,combine eggs,vegetables and salt and pepper to taste. Mix well. Stir in matzah meal of flour. parsley and feta. Heat vegetable oil in a large fying pan. Place veg. mixture,formed into pancake size cakes,in hot oil and fry until golden brown on both sides,2-3 min. per sides. Add more oil as needed. Drain fried latkes on paper towels.
If not eating right away keep them warm and crispy by placing on a cookie sheet one layer at a time in a 200 oven.
