Ingredients

  • 2 cups chopped dates
  • 8 oz. candied pineapple
  • 8 oz. candied cherries
  • 4 cups pecans or walnuts
  • 1 cup white raisins
  • 4 eggs
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla

Preparation

Step 1

Combine fruits, nuts, flour, sugar, and baking powder.
Beat eggs, salt, and vanilla. Add to fuit mixture.
Mix well, pack in pan lined with greased brown paper.
Bake 325 for about an hour or until done. Wrap in foil while still hot. Store for a few days to let flavors marinate. Can add brandy to baked cake it desired.
Can bake in a tube pan, bread pans, or small loaf pans.
