APPLE & BROWN RICE MUFFINS

Ingredients

  • 1 C. cooked brown rice
  • ½ C. flour
  • 3/4 C. whole wheat flour
  • 2 tea. baking powder
  • ½ tea. salt
  • ½ tea. cinnamon
  • 1/4 c. butter, melted
  • 1 C. apples shredded (unpeeled)
  • 1/2 C. milk
  • 1 egg
  • ½ C. brown sugar
  • ●Sift together the flour, baking powder, cinnamon and salt.
  • ●Add the rice, butter, apples, milk, egg, and brown sugar and stir just to moisten.
  • ●Grease muffin tins and fill about 2/3 full.

●Bake @ 350 F. for 30 min. or until done.
