LEMON LOAF (FAVORITE)

light and buttery with a delicate lemon flavour.

Ingredients

  • 2 cups all purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter/margarine softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup milk
  • 1 1/2 tbsp grated lemon zest
  • GLAZE
  • 1/4 cup lemon juice
  • 1/4 cup icing sugar

Preparation

Step 1

Measure first 3 ingredients into medium bowl. Stir. Set aside.

Cream butter and sugar into large bowl. Add eggs 1 at a time, beating well after each addition.

Add flour mixture in 3 parts, alternating with milk in 2 parts, stirring after each addition until just combined. Add lemon zest. Stir until just combined. Spread in greased 9x5x3 loaf pan. bake in 325 for about 1 hour.

GLAZE:
Stir lemon juice into icing sugar in small bowl until smooth. Randomly poke several holes in loaf with wooden pick. Spoon lemon juice mixture over hot loaf.

LEMON POPPY SEED LOAF:
Add 2 tbsp poppy seeds to flour mixture. Bake as directed.
