Ingredients

  • 3-4 cups basil leaves
  • 1 tsp lemon juice
  • 1/4 cup pine nuts
  • 1 cup extra virgin olive oil
  • Salt and pepper
  • 4-5 cloves garlic
  • 1-2 cups parmesan cheese

Preparation

Step 1

roast pine nuts in small amt olive oil in skillet till toasty brown, set in freezer to cool

place in blender: 1 cup olive oil, 1 tsp lemon juice, 1 tsp salt, 1/4 tsp pepper. Add 3-4 cups basil leaves and 4-5 cloves of garlic. Blend on high 2-3 min.
Then add cool pine nuts and pulse 2-3 x's.

Combine in bowl with 1-2 cups parmesan cheese, stir.

Enjoy! (Note: leftovers can be placed in a zip-lock bag an frozen to use in soups, etc.)
