Ingredients

  • 1 (6 to 7 lb.) spiral ham, bone-in
  • 1/2 cup dark brown sugar
  • 1/4 cup honey
  • 1 orange, zest and juice (1/4 cup of juice)
  • 6 to 8 scrapes of fresh nutmeg (or a pinch of ground)
  • 10 to 12 sprigs fresh thyme
  • 2 tsp pumpkin pie spice
  • salt & pepper

Preparation

Step 1

1. Preheat oven to 325 degrees.

2. In a medium bowl, mix together the brown sugar, honey, orange zest, 1/4 cup orange juice, pumpkin pie spice and nutmeg. Season with salt (the glaze).

3. Roll out enough tinfoil to surround ham, and place ham in center. Peel back layers of ham and place a sprig of thyme between every other layer of the spirals. Pour half of the glaze over the ham, allowing it to sink into the layers.

4. Tightly wrap ham in foil and place on rack in a roasting pan. Fill pan with an inch of water and roast in oven until internal temp reaches 140 degrees, about 20 minutes per pound.

5. Pour remaining glaze into a small saucepan and set on medium heat. Bring to a simmer. Whisk mixture until small bubbles appear all over, then turnoff heat. The glaze will thicken.

6. Raise oven temp to 400 degrees. Remove ham from oven. Using caution and tongs, peel back foil from the top; slather remaining glaze all over top of ham and place back into the oven, uncovered for 15 minutes.

7. Remove and rest.
