Ingredients

  • 1 cup cooked, riced cauliflower
  • 1 cup shredded mozzarella cheese
  • 1 egg, beaten
  • 1 tsp dried oregano
  • crushed garlic
  • 1/2 tsp garlic salt
  • Marscapone cheese
  • Mozzarella cheese, shredded
  • Parmesan and extra sharp cheddar
  • Pesto
  • Sliced compari tomatoes

Preparation

Step 1

take 1 large head of cauliflower, remove the stems and leaves, and chop the florets into chunks. Steam raw cauliflower and place cooked cauliflower on Pam sprayed cookie sheet. 400-415 for 25-30 min to dry out. Cool off and put in bowl. Slice through it with knife to shred it into small pieces. Can be done the day before you need them.Put in refrigerator over nite.

In the am mix all pizza crust ingredients together and make 13-15 medallion size pizzas. Place on Pam sprayed cookie sheet and bake 13-15 min at 400 till crust gets somewhat brown. Cool. Add toppings just before you want to serve them and place back in the oven for about 13 min at 400,

In a medium bowl, combine the cauliflower, mozzarella cheese and egg together and stir until well incorporated. Add the oregano, garlic, and garlic salt. Transfer to the cookie sheet, and shape into a 9-inch circle. Brush the crust with olive oil to help it brown in the oven.

Baked at 450 degrees F for 15 minutes, until the crust is browned and cooked through the middle.

Remove the crust from the oven, add your sauce and toppings. Place under a broiler at high heat until the cheese is melted and bubbly. (About 3-4 minutes).

Allow the pizza to cool slightly, then cut into slices and serve.
