Ingredients
- 3 Pods Garlic
- 3 Shallots
- 2 Habanero
- White Onion
- Pinch Red Pepper
- Pinch Cumin
- Salt n' Pepper

Step 1
Put garlic, Shallots and Habanero in a food processor. Pulse, season with cumin and salt n'pepper set aside.
Julienne cut onions - saute' in 1/2 tsp of butter and oil until crisp golden brown
In a separate pan saute the garlic/shallot/habanero mixture
For the Nachos -
Spread tortilla chips on a non-stick pan. Get sliced Chipotle Gouda Cheese and cut to the size of each chip. Layer from the chip: Sliced cheese, a slight spread of the pepper/garlic mixture, meat (smoked, grilled, broiled), sauteed' onions and shredded cheese on top. Bake 375 till melted. Top with avocado and fresh cut tomatoes.
