Stuffed Jalapenos

Ingredients

  • 18 jalapenos
  • 8 oz cream cheese, softened
  • 1/2 C cheddar cheese, shredded
  • 9 slices bacon, cut in half
  • Favorite sauce (I prefer onion and garlic jam but bbq or chipotle sauces should work too)

Preparation

Step 1

Cut jalapenos in half, trying to leave a portion of the stem on both halves. Using a grapefruit spoon, scoop out and discard the seeds and membrane.

In a bowl, mix the cream cheese and cheddar cheese. Stuff the peppers with the mixture.

Wrap one-half slice of bacon around each stuffed pepper and place on shallow pan.

Brush each top with your preferred sauce.

Bake 375 for 20-25 minutes.
