Ingredients

  • 1 oz butter
  • 3 oz onions, carrots, celery, bell pepper, shallots
  • 1 1/2 lbs shrimp
  • 1 bay leaf
  • 1 oz thyme
  • 3 qts seafood stock
  • 2 oz fired brandy
  • 1 qt heavy cream
  • salt and white pepper to taste
  • 2 oz tomato paste
  • 2 oz paprika
  • Chopped parsley
  • Light roux
  • Onion salt
  • Tony's seasoning

Preparation

Step 1

Heat pan.
Sweat onion, celery, bell pepper, shallots in butter.
Add diced tomato, bay leaf, majority of the chopped parsley, paprika (for diced tomato: x the tomato on the back, boil in salt water for 2 minutes, shock in ice water, peel, take out seeds, dice)
Add 3 tbsp. roux, tomatoes, seafood stock, onion salt, thyme, white pepper, brandy flamed, cream, 1/2 teaspoon Tony's, add shrimp. Add parsley on top for presentation.
