- 900 grams all purpose flour
- 50 grams 80 deg water
- 20 grams salt

Mix leaven and flour, rest 20-40 min
Add salt and water, working in with pinches
Turn dough every 30 min for two hours
Turn dough each hour for next two
Shape dough, rest 20 min
Shape and put in bowl
