Cranberry Puffs

Ingredients

  • 1 cup flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 cup evaporated cane juice (sugar) or other sweetener
  • 1 egg
  • 1/3 cup milk

Preparation

Step 1

Heat oven to 400º. Grease 8 large muffin cups. Spoon about 2 tablespoons of the cranberry relish into each cup. Mix the remaining ingredients except the butter sauce with a spoon. Mix well for 30 seconds. Fill muffin cups to 2/3 full with batter.

Heat 1/2 cup evaporated cane juice and 1/4 cup light cream to boiling. Stirring constantly. Remove from heat. With a mixer, beat in 1/4 cup butter and 1/2 tsp vanilla. Drizzle over puffs on individual plates, or drizzle with honey or maple syrup or sprinkle with sugar.
