Ferdinanda's Florentine Quiche

Ingredients

  • Rice Crust (see below)
  • 1 10-oz pkg. frozen chopped spinach
  • 2 TBS butter
  • 3 lg. eggs
  • 2 cups small curd cottage cheese
  • 2 TBS whipping cream
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/8 tsp paprika
  • 1/8 tsp cayenne
  • 1/3 cup grated Gruyere cheese
  • 1/4 cup grated Parmesan cheese
  • Rice Crust
  • 2 cups cooked rice, room temp
  • 2/3 cup grated Gruyere cheese
  • 1 lg egg

Preparation

Step 1

For crust: Whip egg then add cheese and rice and mix thoroughly. Press into pie plate.

Preheat oven to 350F. Cook spinach according to pkg. and drain pressing all the water out. Add butter and set aside.
Mix eggs, cheeses, mustard, seasonings, and cream. Stir until well mixed. Add spinach and mix, then pour into rice crust.
Bake about 40 min. Let cool for 5 min then serve.
