Whipped shortbread

  • 3 cups butter
  • 1 1/2 cups icing sugar, sifted
  • 4 1/2 flour
  • 1 12/2 cups cornstarch
  • halved candied cherries

Preparation

Step 1

In a large bowl, cream butter & icing sugar until light and fluffy. Gradually add flour & cornstarch, beating until well blended.
With hands lightly dusted with additional cornstarch, roll dough into 1-in. balls. Place 1 inch apart on ungreased baking sheets. Press lightly with a floured fork. Top with cherry halves.
BGake at 300 for 20 - 22 min. or until bottoms are lightly browned., Cool for 5 min. before removing from pans to wire racks. Makes about 8 doz.
