Flourless Chocolate Cake

Ingredients

  • Nonstick butter spray
  • 1 stick cold butter
  • 4 oz bittersweet chocolate
  • 1 tap vanilla extract
  • 2 oz. hazelnut liquor (Frangelico)
  • 3/4 cup sugar
  • 1/2 cup cocoa powder, sifted
  • 3 eggs, beaten
  • Ganache
  • 4 oz. semisweet chocolate chopped
  • 1/2 cup heavy cream
  • berries to decorate

Preparation

Step 1

Preheat oven to 375
Spray 8" round cake pan with nonstick butter spray or use individual cups. Line bottom(s) with parchment paper.
Put bittersweet chocolate and hazelnut liquor in a bowl on top of a double boiler. Stir until melted and smooth. Remove from heat and put into an ice bath to cool. NOTE, this is important to prevent eggs from cooking when added. Mix in the sugar, cocoa powder and eggs. Pour into cake pan and bake 20-25 minutes.
Ganache
Heat the cream gently over a low heat and add chocolate. Stir until chocolate melts. Pour over the cake and allow to set 10 mins before serving. Decorate with berries
